PB & J Sandwich Cookies


Happy 4th of July!

PB & J Sandwich Cookies (recipe from Cooks.com)

½ c butter, softened
½ c brown sugar, packed
½ c sugar
½ c peanut butter
1 egg
1 ½ c flour
¾ t baking soda
1/8 t salt
jelly or jam (you choose)
powdered sugar

Beat together butter, sugars, peanut butter, and egg until fluffy. Add flour, baking soda, and salt and combine well.

Preheat oven to 350°. Divide the dough into three disks, wrap in waxed paper, and refrigerate 3 hours.




After dough has chilled, work with one ball of dough at a time, keeping the rest of the dough refrigerated. (It’s a soft dough and much easier to work with when cool.) On a well-floured surface, roll dough to ¼-inch thickness and cut with cookie cutters.







Bake cookies 8-10 minutes, or until set.  Let cool 1-2 minutes on the cookie sheets and transfer to cooling racks.








To make sandwiches, spread a small amount of jelly between two cookies (I used cherry and blueberry to celebrate the holiday).  If desired, dust with powdered sugar.

Makes 2 dozen sandwich cookies.

  1. What a great cookie! I first glance I thought they were gingerbread. Love that they are made with peanut butter ;)
